Spicy Roasted Squash

(Variated to Spicy Roasted Pumpkin)
Ingredients
I large onion squash (variate to butternut pumpkin).
2 teaspoons coriander seeds.
2 teaspoons oregano.
1/2 teaspoon fennel seeds (swap to seeded mustard, as no fennel near me).
2 small dried red chillies.
1 teaspoon of salt (or more if unhealthy like me).
1 teaspoon of black pepper.
1 clove of garlic.
1 tablespoon of olive oil.
MAKING IT
- Halve squash or pumpkin.
- Cut length ways into quarters, then halve again.
- Put into bowl.
- Ground all herbs and spices with pestle and morter(sturdy bowl & rounded rolling pin edge will suffice.
- Add olive oil.
- Toss squash or pumpkin through, coat well.
- Place on baking tray, skin side down.
- Cook for 30 mins (or until tender). on 200 degrees or 400 farenheit.
Best served with a glass of shiraz and thoughts of a handsome man.
Very good to impress family or important guests with Oliver know how....

Festive Holiday Coronary Yams

Thanksgiving will never be the same after experiencing the experience of my Festive Holiday Coronary Yams Experience! It's is hypoglycemic ecstacy, I tell ya.
Ingredients
3 lbs yams (or however much will fill your biggest pot)
salt to taste
1 c. of unsalted butter (for your festive holiday coronary)
1 small bag unsweetened coconut
1 c. raw sugar (or brown. No white sugar ever. Ever!)
1 bag of marshmallows
Directions
- Wash and peel all the yams. Cut into managable pieces. (Not too small!) Put them all in a large pot, and fill with water (salt as desired)... Now, boil those yams!
- When the yams are soft (poke a yam or two to make sure they're cooked all the way through), remove from heat, and drain well.
- Arrange the yams in a cake pan (or casserole dish) and bake in a preheated 350 degree oven (175 celsius).
- In a pan, melt the unsalted butter. Add the shredded coconut and sugar. Stir until sugar begins to dissolve.
- Pour butter mixture over yams, and continue to bake for around 15-20 minutes. Cover with marshmallows and bake until the tops of the marshmallows are browned.
Voila! A festive holiday coronary for one and all!

Easy Southwest Fried Corn

This dish is best prepared in a well-seasoned cast iron skillet. It really lends a wonderful flavor to the corn. Also, the corn is best with as little liquid as possible without letting the stuff stick.
Ingredients
2 cans whole kernel corn, fully drained
1 cup finely chopped white onion
1 can diced Ro-Tel tomatoes
1/4 tsp. salt
1 tsp. Tabasco sauce
2 TBSP olive oil
Freshly ground black pepper
Directions
- Heat the oil over medium heat.
- Add the onion, sautee for a while until tender.
- Add desired amount of Ro-Tel. I like to use half a can. Sautee until the tomato pieces get darker. Stir often.
- When it's all softened and cooked, add the salt. Keep stirring. Then add the corn.
- At this point the mixture should be frying up really nice. Not too much oil or liquid in the skillet. After a few minutes add the Tabasco and black pepper.
- Serve hot and sizzling. A great side dish for some chicken or steak.
Serves 4-5 people
