Bacon & Cheese Muffins

Ingredients

1 egg
1/4 tsp. salt
1/4 c. oil (I use olive)

2 c. flour
4 tsp. baking powder
2 c. sharp cheddar cheese
2 T. parsley or cilantro, chopped
1/2 c. cooked bacon, finely chopped
1-1/2 c. milk
pepper to taste

Directions Muffins!

  • Preheat oven to 350d.
  • Beat egg, salt, and olive oil. Set aside.
  • Stir together flour and baking powder until well mixed.
  • Add cheese, parsley, and bacon to flour mixture.
  • Add egg mixture and milk.
  • Stir only until combined. (Don't overstir.)
  • Spoon into muffin tins. Garnish with extra cheese.
  • Bake for 15-20 minutes until golden brown.

Leftovers hint: Slit leftover muffins open, stuff with a small slice of brie, and reheat in oven (or microwave).

Makes one dozen muffins

Kick Ass Freedom Toast

Since I only make this, like, twice a year, I never substitute with less fatty ingredients. Which is why I only make this twice a year... Must keep booty in check.

Ingredients

3 large eggs, beaten
1 cup half and half
2 Tbsp vanilla extract
4 heaping spoonfuls of raw sugar (Or use the white crap. Blech!)
Handful of macadamia nuts crushed into itsy bitsy pieces (I suppose you could substitute this with almonds)

Several slices of dense bread
Unsalted butter

Directions

  1. Combine eggs and half and half in a large bowl. I don't really ever measure, so this whole 1 cup of half & half business is a guess, but the egg mixture should be just barely yellow. Like the inside of a banana.
  2. Add vanilla extract and sugar. Mix until the sugar has dissolved. Add macadamia nuts.
  3. In a pre-heated pan (medium heat!) melt a dollup of butter.
  4. Use a fork to poke holes in a slice of bread. Dip in egg mixture until it soaks through.
  5. Fry, flip, fry, remove. Repeat with new slice of bread.

Then try not to die from the fat overload.

Mountain Man's Breakfast

Ok, this recipe is not for the faint of heart ... literally. When I was in college, my roommate and I created this meal when we just had a few things left in the fridge and we needed a good hangover remedy breakfast. This recipe will blast throught the strongest hangover leaving you feeling refreshed, yet gassy.

Ingredients

1/2 log of ground sausage
2 large slices deli ham
2 eggs
1 can black beans or pinto beans
2 flour tortillas or 2 slices toast
1/2 cup onion, minced
Some cheez whiz, warmed in microwave
Assortment of gut-burning condiments such as Tabasco, picante sauce, salsa, or pico de gallo
Orange juice

Directions

  1. In a small pot, heat the beans as instructed
  2. In a large skillet, saute onions in some oil. Add ground sausage and brown. Remove sausage/onion mixture and set aside. DO NOT drain grease.
  3. Keeping skillet very hot, fry the deli ham and brown on both sides.
  4. Crack the eggs on top of the ham and cover the skillet to cook the eggs through.
  5. Prepare your plate: tortilla on bottom, then add the ham/egg, then sprinkle the sausage/onion mixture, then sprinkle desired amount of beans, top with cheese whiz and your choice of hot sauce.
  6. Pour glass of OJ and enjoy. This tortilla thingy will probably NOT roll up, so don't even try. Just use a knife and fork.

Cheesy Hashbrowns

Hold on, cholesterol! Here comes Kaitlin's recipe for cheesy hashbrowns! Yay!

Ingredients

2 lbs. frozen hashbrowns
1 pint sour cream
1 stick melted butter
1/4 cup chopped onion (or more if you are like me and luuuurve onions)
1 can cream of chicken soup
2 cups grated cheese (cheddar probably works best, but I wouldn't know for sure since it is all I've ever tried)
1 tsp. salt
1/4 tsp pepper

Directions

  1. Combine ingredients
  2. Pour into a big ol' oven-proof dish
  3. Bake uncovered, 350 for about one hour

Cheesarito

Ingredients
Package of large tortillas (10 inch)
1 C milk
1 tsp. flour
1 lb. ground sausage (more or less as you like)
6-7 beaten eggs (more or less as you like)
4 or 5 slices of American Cheese
    (You can substitute with 1/2 C of shredded cheddar cheese, if you prefer.)

Directions

  1. Preheat oven to 350 degrees.
  2. Brown sausage. Drain drippings in a bowl to save for later.
  3. Add beaten eggs to sausage in skillet. Cook until scrambled, add in cheese.
  4. When cheese has melted, take skillet off heat.
  5. Spray/Grease a 9x13 baking pan. Roll cheese, egg, & sausage mix up in tortillas, placing them seam side down in pan.
  6. Add flour to sausage drippings, stir in milk. Heat in skillet until it starts to thicken.
  7. Pour gravy over tortillas, bake for 10 - 15 minutes.
Makes at least four tortillas, possibly more if you like `em small.
