Permalink Sausage Chili

Ingredients
2 pounds Ekrich Smoked Sausage (2 packages), cut into 1/4" slices and quartered
2 chopped yellow onions
2 cloves garlic, chopped
2 tablespoons chili powder
2 tablespoons cumin
1 bottle beer (lager or dark beer)
1 (28 oz.) can of whole tomatoes, crushed
3 tablespoons tomato paste
1 teaspoon sugar
2 cans red kidney beans (more if you like, I don't much enjoy them so I only use two cans.)
thyme
oregano
paprika
red cayenne pepper
salt
pepper

The Thing You Do:

  1. Fill a pot with about a tablespoon of vegetable oil. Fry up the sliced sausage (about five minutes.)
  2. Add the onions, garlic, chili powder, and cumin. Stir until the onions become soft (about five minutes.)
  3. Deglaze the pan with the beer. Cook until the foam subsides. (about a minute.)
  4. Add the tomatoes, paste, sugar, and beans.
  5. Add a pinch of the spices, a couple extra of the paprika and cayenne pepper if you like your chili hot.
  6. Stir and bring to a boil. Lower the heat to medium and simmer, uncovered, for about thirty minutes.
  7. Remove from heat. Sprinkle grated cheese and green onions on top to garnish.

Now that I think about this recipe, I think it's more of a gumbo than a Chili. Cause any self-respecting chili recipe does not contain thyme or oragano.

That's because where you're from, salt is the only spice. I bet pepper is considered "too French." Maybe it's called "Freedom Flavoring" instead.

I'm 'a have to cook this to be sure, but I'm pretty sure it's not gumbo.

First of all, it's got chili powder and cumin in it. (Commercial chili powder does contain oregano, by the way, though I'm not sure about thyme.)

Second of all, if chili dogs work (and they do) then so should this, even if it does have smoked sausage in it.

I have been using beer in EVERYTHING lately. Stop me before I deglaze again.

Mine comes with a free gallon of milk and a free roll of toilet paper.

Okay. I used linguica and skipped the paprika and thyme. Used Dixie Blackened Voodoo Lager. It's definitely chili and not gumbo.
