Permalink Festive Holiday Coronary Yams

Thanksgiving will never be the same after experiencing the experience of my Festive Holiday Coronary Yams Experience! It's is hypoglycemic ecstacy, I tell ya.

Ingredients

3 lbs yams (or however much will fill your biggest pot)
salt to taste

1 c. of unsalted butter (for your festive holiday coronary)
1 small bag unsweetened coconut
1 c. raw sugar (or brown. No white sugar ever. Ever!)
1 bag of marshmallows

Directions

  1. Wash and peel all the yams. Cut into managable pieces. (Not too small!) Put them all in a large pot, and fill with water (salt as desired)... Now, boil those yams!
  2. When the yams are soft (poke a yam or two to make sure they're cooked all the way through), remove from heat, and drain well.
  3. Arrange the yams in a cake pan (or casserole dish) and bake in a preheated 350 degree oven (175 celsius).
  4. In a pan, melt the unsalted butter. Add the shredded coconut and sugar. Stir until sugar begins to dissolve.
  5. Pour butter mixture over yams, and continue to bake for around 15-20 minutes. Cover with marshmallows and bake until the tops of the marshmallows are browned.

Voila! A festive holiday coronary for one and all!
