Permalink Mountain Man's Breakfast

Ok, this recipe is not for the faint of heart ... literally. When I was in college, my roommate and I created this meal when we just had a few things left in the fridge and we needed a good hangover remedy breakfast. This recipe will blast throught the strongest hangover leaving you feeling refreshed, yet gassy.

Ingredients

1/2 log of ground sausage
2 large slices deli ham
2 eggs
1 can black beans or pinto beans
2 flour tortillas or 2 slices toast
1/2 cup onion, minced
Some cheez whiz, warmed in microwave
Assortment of gut-burning condiments such as Tabasco, picante sauce, salsa, or pico de gallo
Orange juice

Directions

  1. In a small pot, heat the beans as instructed
  2. In a large skillet, saute onions in some oil. Add ground sausage and brown. Remove sausage/onion mixture and set aside. DO NOT drain grease.
  3. Keeping skillet very hot, fry the deli ham and brown on both sides.
  4. Crack the eggs on top of the ham and cover the skillet to cook the eggs through.
  5. Prepare your plate: tortilla on bottom, then add the ham/egg, then sprinkle the sausage/onion mixture, then sprinkle desired amount of beans, top with cheese whiz and your choice of hot sauce.
  6. Pour glass of OJ and enjoy. This tortilla thingy will probably NOT roll up, so don't even try. Just use a knife and fork.

You know, I'm making this this weekend, although I'll be substituting with REAL cheese because that cheese-food stuff makes me naaaaaaauseous... Will report on sunday!!

Yes, real cheese is fine. I sometimes shred some colby jack on it. Cheesus Christ!
